When exporting the DB as json there are also historical items present like old emails and passwords. I can't find any way in the enpass app itself (OSX) to delete the history o those items or even all histories. This would be a nice feature to add

I was also looking for a way to delete password history. In my case, I only wanted to do so for a single Enpass item. As a workaround, I edited the item, added a second password field, copied/pasted the current password from the original password field to the new/second password field, then deleted the original password field and saved the item. Rename/reorder fields as desired, of course.
